Sometimes you need a treat! Here is my recipe for a delicious dessert/breakfast bread that will surely perk up your Tuesday routine.

Bread:
- 1-3/4 cups all-purpose flour
- 1-1/2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 4 medium ripe bananas, mashed
- 1/2 cup butter, melted
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
- ½ cup blueberries (divided)
Sugar Crystal Topping:
- 1 teaspoon sugar
- ½ teaspoon water
Directions
- In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in ¼ cup blueberries.
- Pour into a greased and flour dusted 9-in. x 5-in. loaf pan. Top the batter with the remaining ¼ cup blueberries. Bake at 325° for 1 hour 20 minutes or until a toothpick comes out clean. Cool on wire rack.
- Pour sugar into the base of a ramekin. Pour water directly over. Place in oven at 325° degrees until the water dries out leaving crystallized sugar. Remove from the oven and let cool. Use a fork to break up the crystals from the ramekin and set aside.
- Brush top of bread straight out of the oven with melted butter. Sprinkle sugar crystals on top.
